I woke up in such a good mood today. I was excited and happy to go to work. I haven’t had that feeling in years. It’s Friday and I was excited to have the weekend off, also. Having a normal schedule is really refreshing, even though I haven’t 100% adapted yet. The weekend is really a time to reset. I have to leave the house tomorrow for a dentist appointment, my 2nd vaccine and to go grocery shopping.
It’s pouring rain here again, so I don’t think I’ll go to the state park where I like to hike tomorrow. I may take it easy tomorrow and work on a few things and maybe make some art! My goal was to clean and organize my whole apartment before my job started. I didn’t quite make that goal, but during the first week of work I got it all pretty much taken care of, except for my art area. I’ve been super overwhelmed to tackle that part but now I am ready for it and making art really helps me feel productive and happy.
The cravings for other foods is still very strong. In fact, I decided not to go to the grocery store tonight because I could have easily been taunted by all the foods and choices. I didn’t make an online order pick up so I figured it would make sense to tomorrow, after spending some time tonight planning.
I am making salmon cakes for dinner tonight. (It’s just after 7 now, I decided to write the blog early). I’m really excited to try this recipe and I’ve never made anything like this so it’s fun to branch out. Otherwise I may do something similar to last week with the meatloaf and spaghetti squash. It was really nice to have things on hand to just heat up quickly. It makes the difference sometimes in setting myself up for success.
I’ve been craving cheeseburgers lately and the cheesy part in particular. I don’t really think there is a way to mimic that in the world of Whole 30. I can try with a cheeseburger bowl and some special sauce. That will go on the menu for next week.
I’m getting hungry now so I’m going to make dinner. I’ll post pictures tomorrow and let you know how they go and if they’re worth trying.
